7 Fast-Growing Veggies for Farmer’s Market-Worthy Produce

Farmer’s Markets are one of the highlights of summer. With the current conditions, you may be needing to launch your very own farmer’s market. Fortunately, thanks to these super fast-growing veggies, you can have fresh produce in 6-8 weeks. You’ll be having the best homegrown salads this summer in no time!

Spinach

You can begin harvesting individual leaves about 3 weeks after sowing for use as baby greens. Or you can pick whole plants 5-6 weeks after seeding by pulling or cutting at the soil line. Plant your spinach in full or part sun and make sure it’s in moist, well-drained soil.

Green Beans

Green beans are easy to grow and hardly ever bothered by pests. Pods are ready to pick when 6-8 inches long, about 6-7 weeks after planting. Your green beans need full sun and well-drained soil. 

Arugula

A lot of leafy greens are speedy to grow. A delicious addition to any salad, arugula can be harvested as soon as 4 weeks after planting. You can handpick the individual leaves to extend the harvest. Plant your arugula in full or part sun and in moist, well-drained soil.

Cucumber

Many varieties of cucumbers begin ripening within 6-7 weeks after planting. Pick them every few days to prevent oversized fruits that may be seedy and bitter. You’ll want to keep your cucumbers well-watered to avoid bitterness, too. Plant your cucumbers in full sun and in moist, well-drained soil. 

Kale

Another go-to member of the leafy green fam, you can pick kale as soon as 3-4 weeks after seeding (for baby kale). Wait another 2-3 weeks before harvesting mature leaves. Kale likes to be planted in full sun and in moist, well-drained soil. Get ready to watch it grow as kale can get up to 3 feet tall!

Green Onion

Green onions are ready to be harvested in as little as 5 or 6 weeks after planting. Pick green onions when they are 6-8 inches tall by pulling the whole plant up out of the ground. Green onions do best in full sun and in moist, well-drained soil. These will taste amazing when chopped and sprinkled on some taco dip!

Bok Choy

Yet again, another awesome leaf! Your stir-frys are about to be turned up a notch with tasty homegrown bok choy. A type of Chinese cabbage, most varieties of this easy-to-grow vegetable plant are ready to harvest 45 to 50 days after planting in spring. Bok choy grows best in partial sun and needs to be planted in moist, well-drained soil.
